Summer Salad Hummus Bowl with Jammy Eggs and Seedy Power Sprinkles

This recipe is very versatile. You can change out the ingredients to match the season. Blood oranges are in season right now so I chose a blood orange vinaigrette to drizzle over the salad. I roasted asparagus to add to the bowl and I used store bought hummus to speed up the recipe.

I serve jammy eggs in the hummus bowl, to get jammy eggs boil for 7 minutes and them put the eggs in an ice bath.

I made a batch of Seedy Power Sprinkles to garnish the bowls

For the salad, I used roasted beets, purple carrots, pickled grapes, kale and sorrel.

Smear the hummus in and around your bowl before placing in the roasted vegetables and salad

I dressed the salad greens with the vinaigrette, but I also like to drizzle the bowl with a little vinaigrette.

The seedy power sprinkles are a mixture of chai, flax and any other mix of nuts you want to use baked in an egg white and honey mixture until they become crunchy. This makes a delicious and topping!
