What's Your Favorite Holiday Pie ?
In my Holiday Pie Cooking Class at Red Stick Spice we had 4 different pies to make. I began by teaching how to make a pate brisee dough. We used the the French fraisage method for bringing our pastry together and ensuring a flaky and tender crust.
We had two whole pies, Chocolate Toffee Pecan Pie and Banana Coconut Cream Pie. We also had two hand pies, Apple Brown Butter with a Maple Glaze and Sweet Potato with Cinnamon Brown Sugar Glaze.
