Biscoff Blondies
I will find any excuse to buy Biscoff Cookies or Cookie Butter and this recipe lets me do both.
Biscoff Blondies
Ingredients:
2 cups firmly packed light brown sugar
1 cup unsalted butter, melted and cooled
1 cup creamy cookie butter, melted
1 tsp baking powder
½ tsp salt
2 large eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
¾ cup Biscoff cookie pieces
¾ cup Chocolate Chips (optional)
¼ cup roasted pecans
Directions:
Preheat oven to 350 degrees. Line a 9x13 pan with parchment paper, letting excess extend over pan.
In a large bowl, whisk together brown sugar, melted butter, melted cookie butter, baking powder, and salt until combined. Add eggs, one at a time, whisking well after each addition. Whisk in vanilla. Stir in flour just until combined. Spread in prepared pan. Break Biscoff cookies into pieces sprinkle batter with cookies pieces and ¼ cup pecans. Bake for 25-30 minutes. And let cool completely.
Using excess parchment paper as handles, remove from pan and cut into blondies.
