Towering Nachos

This is magical to watch how the nacho chips fall onto each other when you take the mold off. A classic!

Super Melty Cheese Sauce

Ingredients:

2 Tbl butter

1 Tbl flour

1 cup whole milk

1 cup heavy cream

2 oz. each of grated mild cheddar, Monterey jack with peppers, Oaxaca and Asadero (also known as queso quesadilla)

¼ tsp cumin

2 Tbl Candied Jalapenos, chopped

2 Tbl Candied Jalapenos juice

2 Tbl Pico de gallo (recipe follows)

Directions:

Melt 2 Tbl butter in a saucepan over medium heat, add flour and whisk until smooth and toasted, about 5 minutes. Whisk in milk and cream, bring to a boil. Reduce heat and add cheeses. Whisk until melted. Stir in cumin, jalapenos, pico de gallo.

Pale Ale Pulled-Chicken

Ingredients:

3 lb boneless, skinless chicken thigh, trimmed

2 Tbl Capitol Heights Blend

4 medium cloves garlic, smashed

2 Tbl honey

2 Tbl tomato paste

Salt

1 12-oz. bottle American pale ale

Direction:

Position a rack in the center of the oven, and heat oven to 325 degrees.  Season chicken with Capoitol Heights Blend. Put the chicken and garlic in a 5-quart Dutch oven with a lid. In a medium bowl, whisk together the honey, tomato paste, and 1 tsp. salt, then whisk in the beer and pour over chicken.

Place the pot over high heat and bring to a rapid simmer. Cover and transfer to the oven and braise for 50 to 60 minutes.

With a slotted spoon, transfer the chicken to a bowl. Using two forks, pull meat into shreds and set aside.

Pico de Gallo

Ingredients:

1 yellow or red onion

6 Roma tomatoes (slightly under ripe is fine)

1 cups fresh cilantro leaves

1 jalapeno

¼ cup Garlic Jalapeno olive oil

1-2 lime

Salt

Directions:

Dice up equal quantities of onion and tomato. Roughly chop the cilantro.

Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don't want to cause any fires. Now dump the four ingredients into a bowl.

Slice the lime in half and squeeze the juice from half a lime the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed.

Assembling Towering Nachos:

Ingredients:

Super Cheesy Sauce

Pale ale chicken

Pica de gallo

Fresh corn kernels

Canned black beans, drained

Green onions, chopped

Candied jalapenos, sliced

Avocados, chopped

Sour cream

Cilantro

Oaxaca, crumbled

Corn tortilla chips

1 -10 oz. can works well or a round I gallon plastic jug with top and bottom cut out for the mold for nachos.

Directions:

Place the mold on a large platter, spoon some cheese sauce on the bottom, Layer ¼ lb. of chips one-quarter of the way up. Spoon more cheesy sauce over chips, then a layer of chicken, candied jalapenos, Pica de gallo, black beans, green onions, avocados, fresh corn kernels, sour cream and cilantro. Repeat layers and slip the mold off and serve.
