When the summer produce is this tasty you need to combine the flavors. This salad does just that, tomatoes and peaches need to be together. The burratta and vinaigrette are just extra!
Salad Ingredients:
4 Heirloom tomatoes, sliced
4 peaches, peeled and sliced
Sea salt and pepper
1 ball of buratta or fresh mozzarella cheese
2 cups arugula
1 shallot, thinly sliced
Fresh basil for garnish
Lemon Balsamic Vinaigrette (recipe follows)
Directions for salad:
On a platter, lay the tomato slices in vertical rows, scatter peach slices over tomatoes. Salt and pepper the fruit. Tear buratta cheese into pieces and scatter on top of the peaches.
Drizzle vinaigrette over the tomato, peaches and buratta.
Place the arugula and shallots in a medium size bowl, season with salt and pepper and add 1- 2 Tbl of the vinaigrette. Toss the arugula and shallot until coated with the vinaigrette. Taste for seasonings. Pile the dressed arugula over the top of the tomatoes and peaches. Keep chilled until ready to serve.
Lemon Balsamic Vinaigrette Ingredients:
1 Tbl shallot, finely chopped
1 tsp honey mustard
1 Tbl parsley or basil, finely chopped
1 Tbl lemon juice
¼ cup Lemon Balsamic Vinegar
½ cup Extra Virgin Olive Oil
Sea salt and pepper
Directions for Vinaigrette:
In a small bowl add the shallot, mustard, herb, lemon juice, vinegar, salt and pepper. Whisk the vinaigrette until combined. Add the olive oil and stir to combine.
