Melon, Cucumber and Tomato Salad with Mint Basil Vinaigrette

It’s finally here tomato season. I have seen Cantaloupe and Cucumber Salad recipes and I have seen Watermelon and Tomato Salad recipes. I thought why wouldn’t all four work in a recipe and it does.

This is so tasty with the Mint Basil Vinaigrette from What’s Gabby Cooking that goes on all things Summer!

Ingredients for the Mint Basil Vinaigrette:

1 shallot, roughly chopped

2 cups tightly packed fresh basil leaves, stems removed (about 4 ounces)

½ cup tightly packed mint leaves, stems removed

1 clove garlic

1/2 teaspoons red pepper flakes

1/2 cup olive oil

2 tablespoons red wine vinegar or white balsamic

1 teaspoon salt

Ingredients for the Salad:

1 cantaloupe, scooped into balls or cut into squares

5 cups watermelon, scooped into balls or cut into squares

1 seedless cucumber, thinly sliced

4 homegrown tomatoes, quartered

Mozzarella, for garnish

Directions:

For the Mint Basil Vinaigrette:

Combine all the ingredients in a high powered blender and blend for 2 minutes until smooth. Adjust salt and pepper and set aside.

For the Salad:

Toss every ingredient separately with vinaigrette and season with salt and pepper

Arrange the various melons and vegetables on a large serving board. Top with Fresh Mozzarella
