Tangy Rose’s Lime-Glazed Wings

This is the season for chicken wings. Playoff  games on the horizon, followed by the Super Bowl and then we go into March Madness.

 

Ingredients for glaze:

I ½ cups Rose’s lime juice or 1 cup lime juice and ½ cup honey

1 ½ cups water

½ cup honey

12 garlic cloves, peeled and smashed

3 Tbl Caramelized Onion Avocado Oil

2-3 Fresno chilies, stems and seeds removed, cut into chunks

½ tsp ground nutmeg

Ingredients for wings

4 ½ lbs chicken wings, wingtips removed

1-2 Tbl Big Daddy’s Smokehouse Blend

1/3 cup Avocado Oil

2 tsp Sea Salt

Cilantro leaves for garnish

To make the glaze:

In a small saucepan over medium heat, combine the Rose’s lime juice, water, garlic, chilies, oil, salt, honey and nutmeg and cook mixture until it reduces to a thick syrup, 20-25 minutes. Transfer to a blender and puree until smooth.

To make chicken:

Preheat oven to 425°. Line a sheet pan with tin foil.

In a large mixing bowl, combine the wings, blend, oil, salt and mix well so the wings are completely covered.

Place wings on sheet pan and bake 30 minutes. Take the sheet pan out of the oven, pour half of the glaze over the chicken wings and flip them over. Place back in the oven for 10 minutes.  Toss the cooked wings with the rest of the glaze and serve
