My Dallas Client Wanted A Taste Of Mardi Gras!

My niece Katie from Dallas called me to ask if I could do a virtual cooking class for her boss and of course I said yes! Her boss, Katherine Roberts is a real estate agent, she wanted to thank her clients and include some friends in a virtual cooking class. Katherine suggested the theme of the menu to be in the Mardi Gras spirit.

I tapped into one of the best cookbook authors when it comes to knowing the food and drink of New Orleans -Julia Reed. Her recipe for Crawfish and Andouille Tart would be perfect. This tart can be a main meal served with a salad or a nibble with cocktails. Speaking of Cocktails, we made a Rum Gimlet to start things off and an easy Monkey Bread King Cake. This menu definitely screams Mardi Gras!

I made the King Cake Monkey Bread a praline filling using caramel bits, toasted pecans and butterscotch chips.

This Crawfish and Andouille Tart recipe begins with puff pastry as it’s base. A goat cheese mixture is then added along with sautéed slices on andouille sausage and crawfish tails. After it comes out of the oven it gets a good grating of Parmesan cheese.
