Success -My Homemade Mozzarella Recipe Worked!
I signed up for Milk Street’s True Cultured Mozzarella Virtual Cooking Class. I ordered the enzymes, rennet and tracked down unhomogenized milk. Timing and temperature are the key to making cheese curds tune into silky balls on mozzarella.
Once you drain the curds, the mozzarella rest for 1-4 hours. You cross your fingers and hope after pouring really hot water on the curds that they will stretch into silky mozzarella balls
And they did! Look at these beautiful delicious creamy mozzarella balls. This was a creative experience and I am glad I signed up and learned another technique.
