Santa’s Elves Energy Cookie Balls

This recipe is what you want to pull out to make with the little ones. They can learn how to measure & and all they do is roll them out and decorate. A great idea for Gifts from the Kitchen. Plus, they are yummy and you can change out the flavors of the chocolate chips for some different flavors.

Peanut Butter, Oatmeal, & Chocolate Energy Bars

Santa’s Elves Energy Cookie Balls

Ingredients:

2 1/2 cups Old Fashioned Oats

1 cup creamy peanut butter

1/2 cup honey

1 tsp vanilla extract

pinch of salt

1/2 cup mini chocolate chips

1/2 cup mini M & M candies-red, white and green or sprinkles

 

Directions:

Combine the oats, peanut butter, honey, vanilla, salt, chocolate chips and M&M's in a large bowl and use a sturdy spoon or rubber spatula to combine until fully moistened.

Pop in the fridge for about 30 minutes to chill and let mixture firm a bit.

Roll the cookie dough mixture into tablespoon size balls and place on a parchment lined baking sheet. Once all the balls are rolled, enjoy right away or chill for about 30 minutes. Store in an airtight container in the fridge for up to 2 weeks.

Notes

Cookie balls can be frozen for up to 5 months!
