Vanilla Bean Sables

This recipe is your slice and bake cookie for Gifts from the Kitchen. You make the cookie dough and wrap it up and give it away. The recipient can slice and bake when they are ready to bake the cookies

Vanilla Bean Sables

Ingredients for the Sables:

2 sticks cold, unsalted butter cut into cubes

½ cup sugar

¼ cup powdered sugar

½ tsp sea salt

3 egg yolks

2 cups all-purpose flour

2 tsp Vanilla Puree

½ tsp Ground Vanilla Beans

Sugar for finishing the edges-Raspberry or Ginger

Directions for the Sables:

Preheat oven to 350°F. In a food processor, process the butter, sugars and salt until well combined and fluffy. Add the egg yolk and pulse to combine. Add in the flour, Vanilla Puree, Ground Vanilla Beans and salt. Process until well combined and a dough forms. Form into a log. At this point, you can refrigerate, freeze or proceed with baking. Before baking, roll the log in the Sugar, cut into slices and bake. Bake for 8-9 minutes.
