Sliced Tomato Salad with Red Onions and Basil
If you don’t know me, I never tire of tomatoes during tomato season and this is one of the best salads ever….
Ingredients:
5 large ripe red tomatoes, sliced crosswise into 1/4-inch-thick slices
2 large red onions, thinly sliced crosswise
Coarse salt and freshly ground pepper
Basil leaves, for garnish
Directions:
Arrange alternating slices of tomatoes and onions on a serving platter. Drizzle with vinaigrette. Season with salt and pepper and garnish with torn basil leaves.
Balsamic Vinaigrette
Ingredients:
1 Tbl chopped shallot
1 tsp Dijon mustard
1 Tbl lemon juice
Sea Salt and pepper
1/3 cup Premium 18 Year Balsamic Vinegar
2/3 cup Arbequina Extra-Virgin Olive Oil
Directions:
In a small bowl, add the shallots, mustard, lemon juice, balsamic vinegar, pinch of salt and pepper. Stir this mixture until salt is melted. Pour in olive oil and combine.
