Walnuts with Sesame and Sumac

I read about these walnuts in Allison Roman’s Book “Nothing Fancy” . They are not very sweet and are most interesting because of all the ingredients in this recipe. You can snack on them, put them in a salad or top a crostini.

Ingredients:

4 cups raw walnuts pieces

1/3 cup maple syrup

¼ cup tahini

¼ cup raw white sesame seeds

2 Tbl olive oil

¼ tsp cayenne pepper

¼ tsp sea salt

1 Tbl sumac

Flaky sea salt

Directions:

Preheat oven to 325°. Line a rimmed baking sheet with parchment. Place the walnuts on the baking sheet and drizzle with the maple syrup over, followed by the tahini, sesame seeds, olive oil, and cayenne. Season with salt and pepper, and toss to combine so that everything is evenly coated.

Roast, stirring occasionally, until the walnuts are golden brown and the syrup is caramelized, 15 to 20 minutes.

Remove from the heat and immediately sprinkle with the sumac and flaky salt, tossing to coat. Let cool completely before serving.
