Carrots with Dukkah over Hummus

Ingredients:

6 medium carrots

2 tsp ground coriander

1 tsp paprika

1 Tbl Caramelized Avocado Oil

Kosher salt

3 Tbl Dukkah

1 cup hummus

 

Directions:

Preheat oven to 400°

Peel carrots and slice on the diagonal into 1-inch-thick pieces. Transfer to a bowl and add the coriander, paprika and salt. Drizzle in the Caramelized Avocado Oil and toss to coat the carrots. Place carrots on a lined rimmed sheet pan and roast in the oven for 15 minutes, until charred and soft.

Sprinkle the carrots with the dukkah and toss to combine. Spread hummus on a platter and top with carrots.
